I present to you Apple Walnut Salad in Orange Vanilla Sauce.
Introduction:
Apple Walnut Salad is one of my favorite health foods during the spring,summer and fall. It is loaded with apples, grapes, celery, golden and regular raisins tossed in a vanilla and orange sauce. This recipe is healthy variation a How to make the famous Waldorf Salad. The sauce is comprised of 6 oz vanilla yogurt and a freshly squeezed large navel orange. This salad is more of a chutney with is like a chunky salsa. Like all recipes, it can be customized to your liking. If you do not like celery, just use more grapes! I always view a recipe as a just a tasty guideline and can be revised as you wish.
Serving Suggestions:
My apple walnut salad is versatile. I serve this healthy and tasty treat to accompany grilled chicken, fish or seafood. It is fantastic on a bed of baby spinach. Honestly It is one of my favorite ” go to ” treats before or after a workout or just as a guilt free snack during the day. Yes I will eat it straight out of the bowl !

Ingredients:
The sauce:
6 oz vanilla yogurt
1 large navel orange ( or substitute 1/2 cup of orange juice)
The healthy and tasty ingredients added to the vanilla orange sauce:
2 Apples – Diced – Your favorite apples (cleaned, peeled and cored)
1/2-3/4 cup grapes (green or purple) – I use green (your choice)
1/2-3/4 cup raisins – I use both golden and regular – Makes for a nice presentation
1/2 cup walnuts – chopped
2 Stalks Celery – chopped
1 tablespoon lemon juice
Remember if you do not like the ingredient- don’t use it – use more of something else or add something else you like.
Directions:
1. Create the Sauce:
In a large bowl by combine the 6 oz vanilla yogurt with a freshly squeezed large navel orange. Allow the bits and chunks from the orange to fall into the bowl and whisk together.
2. One by One add to the sauce:
1. celery and stir 2. add the grapes and stir 3. add the raisins and stir 4. add the tablespoon of lemon juice and stir 5. add the walnuts and stir 6. add the two diced apples and stir.
Its that easy !
Now you can serve accompanying grilled chicken, fish, seafood or just by itself. I really like these pictures… WHAT DO YOU THINK???? Let me know !!!
