Hello Everybody! Today we are air frying a beautiful 5lb whole fresh chicken coated in herb marinade (Wet Rub) with a twist of citrus along with Tricolored fingerling potatoes. For this exciting air fryer recipe, we will be using our awesome Wolfgang Puck Air Fryer since it has a large 9.7-quart nonstick basket, it’s sexy and air fry’s like an air frying beast!

Overview: Bunches of the freshest herbs such as basil, cilantro, parsley, rosemary, thyme, garlic; with that twist of citrus lemon lime and orange to make our marinade (wet rub).
Then, we are going to Air fry for 60 min at 375 at the 30-minute mark we are going to add the potatoes. We will Air Fry until the temperature is 160-165 degrees and allow to rest for 10 min.
Additionally, we are going to toss our tri colored fingerling potatoes with the same herb marinade and air fry those too in the same basket. It’s going to be amazing. Please note that for this recipe you absolutely may substitute tri-color for all golden fingerling or even red potatoes. (I was just getting fancy for the recipe!)
RECIPE AND DIRECTIONS
Ingredients
- 4-5 lb. whole fresh chicken
- 1c fresh chopped basil
- 1c fresh chopped cilantro
- 1c fresh chopped parsley
- 2 Tbs fresh chopped rosemary
- 2 Tbs fresh chopped thyme
- 1 small yellow onion diced
- 1 lemon freshly squeezed
- 1 lime freshly squeezed
- 1 navel orange freshly squeezed
- 1c extra virgin olive oil
- 1Tbls Garlic powder
- 1Tbls Onion Salt
- Kosher salt and fresh cracked pepper for taste
- 2 lbs. fingerling potatoes (halved)
Directions
- Make Herb and Citrus Marinade (Wet Rub).
Add to a bowl your fresh herbs basil, cilantro, parsley, rosemary, thyme, onion. Now add your citrus lemon, lime, orange. Add in olive oil. Add half a tsp of salt and pepper and give a big stir. *Reserve 1/2c marinade for fingerling potatoes.
2. Prepare your fresh chicken. Rinse, clean and dry. Lightly Sprinkle chicken with garlic powder and onion salt. Apply Marinade (Wet Rub) to the whole chicken. Leave some reserved for reapplication for the 30-minute flip.
*Note: you can marinate the chicken for 1-2 hrs. in the fridge. After marinating, remove from fridge and countertop for 1/2 hr. covered on the countertop to get the chill out and comes down in temperature.
3. Cooking the Chicken. This will require a flip of the chicken. We want to cook the bottom first to start the cooking process. Place Breast side down and set air fryer to 375 degrees for 30 min.
4. Coat the potatoes with the Marinade (Wet Rub) and lightly sprinkle with garlic powder and onion salt.
5. After the initial 30 minutes. Flip the chicken to the bottom is now down and the breast side is up. Apply the extra marinade (wet rub) to the top of the chicken (breast side).
ADD the potatoes to the basket with the chicken. Set the timer 30 minutes at 375 degrees to finish.
After an hour of cooking the chicken should read 160-165 for Doneness.
Remove and rest chicken for 5-10 min before slicing in. Enjoy!
